COMMUNITY OF PRACTICE: COOKS AND DIETARY PLANNERS

Facilitated by: Ginette Blake, Registered Dietitian at the MLHU & Chef Chandany Chen; Program Manager & Chef Instructor at London Training Centre

Cooks and Dietary Planners are invited to meet, share ideas, and engage in conversations with fellow professionals. Conversations emerging from this group will be ongoing.

Topics to be covered will include:

  • allergy substitutions; how to create an inclusive environment for your children during meal times

  • utilizing plant based proteins; emphasis on tofu use, storage and manipulation

  • using low cost frozen ingredients

The session will involve creating and comparing the taste and textures of products made with regular ingredients vs. substituted ingredients in hands-on group activities in the kitchen.

Ginette is a Registered Dietitian in London and Middlesex who is passionate about our food system and how food impacts the health of our planet.

A graduate of the Culinary Management program at Fanshawe College, Chandany prides herself in her dedication to develop her craft while contributing to her community. Chandany's artistic talents and understanding of local ingredients consistently shines through as the newly appointed Program Manager and Chef Instructor at the London Training Centre, where her focus is on encouraging, educating and building aspiring chefs through their Culinary Pre-Apprenticeship program and 3-week Local Food Skills program. Chandany's past industry experiences include working at Black Trumpet Restaurant, SOLO on Main in Port Stanley, Abruzzi Ristorante, Fanshawe College School of Hospitality & Tourism as a Bake Professor and SixThirtyNine in Woodstock as their Pastry Chef.
